Apple Pie Cookie Bars

Mmmm. So these were super easy and pretty darn amazing!

~ Ingredients ~


Cookie layer

1 stick of butter
6 tbsp sugar
6 tbsp brown sugar
1 tsp vanilla
1 egg
1 1/2 cup flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon


Apple Pie layer

1 can apple pie filling


Topping layer

1 1/2 cup oats
4 tbsp butter
6 tbsp brown sugar
1/2 tsp cinnamon

~ Directions ~

Turn oven on to 350 degrees (176 C)
Grease a 9x13 pan

Cream together butter and sugars. 
Add egg and vanilla

In seperate, mix together the dry ingredients (flour, salt, cinnamon, baking soda). 

Add dry ingredients to wet. 

Put dough in pan and with floured hands, press into pan until bottom is covered. 

Add layer of apple filling.  

Melt butter for topping. 
Mix together oats, brown sugar, cinnamon and butter. 
Add to top. It won't cover everything but spread as evenly as possible. 

Bake for 30 minutes. Let cool before eating! 

We drizzled caramel over the top.

One Pot Clam Chowder


I LOOOOOOOOVE how easy this was! It can easily be made in less than an hour with plenty of leftovers for another round. Serves 4 total. We love a really good clan chowder. This one isn't as "thick" as I love it, but I could always add a tablespoon or so of cornstarch to thicken it up. Now I just need to find the perfect sourdough recipe and perfect that!

Mint Chocolate Cookie Dough Brownies




I'm getting ready for the holidays and trying out a few new recipes. I'm also 19 weeks pregnant soooo yeah...I'm making a bunch of stuff for my cravings. No, I don't over indulge. I'll probably eat about two of these brownies, but they satisfied my craving for chocolate mint :) I made these on a Saturday night and then tried them out on Sunday morning (haha...great breakfast). They needed time to set in the fridge. So next time, I'll make them in the afternoon if I want them that night.

White Chocolate & Pumpkin Snickerdoodles

It's that time of year folks. When I yearn for cool weather. To pull out all my boots. Slip into fleece tights and wear leg warmers around the house. When the crock pot comes out. When I start stocking up on pumpkin every time I go to the store. When my house always smells of something Fall. Pumpkins, caramel, apples, cinnamon. To kick off Fall 2014, I bring you....

Peanut Butter & Macadamia Nut Oatmeal Cookies

Nom Nom Nom! I haven't used oatmeal in cookies in years...and I'm not sure if I've ever used peanut butter...but DAAAAAMMMMNNN!


There is a slight crunch on the outside and lots of soft, chewy, goodness on the inside. Nothing worse than a hard cookie!

Super Easy White Chicken Chili

Just like the title says, this dish is super super easy. It's one that Aaron and I eat about once a month or so and there's always enough for about 6 bowls total. We eat two, put another two into the fridge, and freeze the rest. YES. You can put this all into a bag after it's cooked and freeze it. We usually pull it out within a month, let it thaw, then reheat it on the stove. Tastes just as good as the first time! I usually serve it up with homemade honey cornbread, but I skipped it this time around for time sake. We threw a few crushed tortilla chips on it instead. :)

Double Berry Breakfast Cake

Ahhhhh....I love coming up with tasty breakfast treats. I'm one of those people that craves something salty and sweet in the morning (like bacon and cinnamon rolls). I try to keep our "big" breakfasts to one a week though, just so we aren't packing away too much extra fat and calories on the weekends.

Cheddar Mac n' Cheese with Breadcrumb Topping

I have to admit, I'm pretty good in the kitchen. Not bad when it comes to cooking (thank you Germany for helping to push along my culinary skills) and I'm pretty phenomenal when it comes to baking. However, there are always a few items that seem to turn out not-quite-right every time I make them. First it was the perfect cookie dough. But I mastered that one. Next up is the perfect mac and cheese. After 8 tries and hubby getting sick of the attempts I have finally got a winner that deserves at least 15 minutes of fame.



So here's the ingredients picture. I thought about leading off with the finished product...but it was soooo delicious that a little suspense seemed in order.
