Zucchini & Eggplant Lasagna with Ground Turkey

If there is anything that I really really love, it's all foods that can be baked into one dish. That also provide me with multiple servings. AND anything that I can do without noodles. I love noodles, but it's nice to not have to have the extra carbs if I can help it. I didn't do a whole bunch of pictures for this because it's that easy. 

P.S. You can omit the turkey to make this vegetarian. Add some extra veggies like mushrooms to keep the quantity the same.

Green Chili Enchiladas

Hello Hello Everyone! So a few nights ago I was craving Mexican...obviously not authentic, but whatever. I've always pretty much sucked at enchiladas (kind of like my issues with Mac & Cheese), however, I think this recipe turned out pretty good!

Not pictured is a pack of skinless, boneless chicken breasts (They were thawing).

ManTASTIC Breakfast Burritos

I got this idea from a friend of mine who's been making her hubby breakfast burritos for a while now. I decided to finally try it out for Aaron. He is the worst when it comes to eating breakfast. I swear if he could go until later afternoon without eating. I've even left food (apples, oatmeal packets, etc.) in his ABU hat so that he would remember to take some breakfast. 

These were pretty easy to make...however, I think I'll need to make a double batch next times since he has been taking two at a time ;) He did say they were AMAZING though. So I guess it's a keeper!

Mexican Style Zucchini Boats

I can't tell you how much I love using zucchini. Especially in dinners as a substitute for noodles or as a veggie "filler". Cooked zucchini doesn't have a super strong taste, but I can add it to lots of dishes and get my veggies in without the taste taking over the dish.

Tonight I wanted to do zucchini boats. These are always yummy. But I love anything spicy so a Mexican flavor was a must.

Please note that a lot of my cooking is "by taste". I may put certain amounts in the ingredients lists, but you can add or subtract depending on your own taste.

*6 boats - serves 3-4

~ Ingredients ~



Along with a 9x13 pan I used the following:


  • 3 zucchini
  • 1 can rotel
  • 1 can non fat refried beans (realized that great northern beans would also be a great choice)
  • 1 pound beef (sorry, I didn't realize I was out of turkey which is what I was going to use)
  • 1 cup cheese
  • 1 6 ounce container of greek yogart
  • about 30 tortilla chips (crushed)
  • 1 packet of taco seasoning (not pictured)
  • salt and pepper
  • *1/2 tsp. ground cumin if you have it

Oh dear god. These things were freaking amazing! I came home after a tough session at the gym to my favorite sight...my husband cooking. Usually I get a "what's for dinner?", but the whole house smelled of my great-grandmothers red sauce and spicy Italian sausage.

I'll give directions as best I can. Since my husband made it, I have to rely on his ability to recall information ;) He also forgot to take "ingredient" photos. Don't worry, I beat him a little for it.
