Mashed Faux-Tatoes

Hey Everyone! We made another side tonight that has quickly become one of our favorites. It's easy to make, tastes delicious AND makes it easy to get in loads of extra veggies (and less carbs) later in the day.

Again, sorry for the not so hot photos. Sometimes for these quick ones, a phone is just easier.

~ Ingredients ~

  • 1 head of cauliflower
  • 4 oz of sour cream
  • 2 tsp chives
  • 1/3 cup Parmesan
  • salt and pepper to taste
I also used my handy emulsion hand blender to get the constancy just right.



~ Directions ~ 

Chop up the cauliflower head and steam the pieces until you can easily pierce them them a fork.

Drain the cauliflower then add it back to the pot (without the steam basket)

Use a hand blender or emulsion blender until you have achieved the desired smoothness.

Add in all the other ingredients and mix thoroughly. Taste your creation and adjust the seasoning however you'd like.

FYI - minced garlic is a great ingredient for this too!



They don't taste EXACTLY like mashed potatoes but they are a great substitute!
