Nom Nom Nom! I haven't used oatmeal in cookies in years...and I'm not sure if I've ever used peanut butter...but DAAAAAMMMMNNN!
There is a slight crunch on the outside and lots of soft, chewy, goodness on the inside. Nothing worse than a hard cookie!
Makes about 20-24 depending on the size.

~ Ingredients ~
- 1/2 cup soft butter
- 1/2 cup brown sugar
- 1/2 white sugar
- 1 egg
- 1 1/2 tsp vanilla
- 1/2 cup peanut butter (creamy or crunchy)
- 1 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup quick oats
- 3/4 cup peanut butter chips
- 1/4 cup macadamia nuts
~ Directions ~
Start by turning on your oven to 350 degrees (172 C).
Cream together the sugars and softened butter.
Mix in peanut butter.
Add egg and vanilla.
In a separate bowl, mix together the flour, baking soda, oats, and salt.
Slowly add the flour mixture to the wet ingredients.
Mix in the peanut butter chips and nuts.
Make into balls about 2 tbsp in size and place on a greased cookie sheet.
Cookie for about 10-12 minutes until the outsides are golden brown. They may seem a little soft, but given a few minutes, they will set up perfectly!
