Tomato & Garlic Hummus

I love love love me some hummus. But I hate paying so much for it! 

If you've got a can of chickpeas or black beans and a few common pantry items, you can make sooooo many different flavors for half the price of store bought.

Parmesan Zucchini Fries & Lemon Garlic Marinaded Chicken

I had a bunch of zucchini and a bit of chicken so I decided another marinade and some zucchini fries were in order! I've been wanting to try the zucchini fries forever! They didn't get as crispy as I wanted, but they still taste really good. Zucchinis are such a "wet" veggie, it's always hard to dry them out properly. So I shall try again in the future. For now though, here is Lemon Garlic Marinaded Chicken and PARMESAN Zucchini Fries. Forgive the photo that says crispy...haha. I got ahead of myself ;)

Strawberry Macadamia Nut Yogurt

I have to eat breakfast within 30 minutes of waking or my blood sugar gets extremely low. I don't have a ton of time in the morning but I try hard to stick to healthy options (i. e., NO cereal, pop tarts, nutri-grain bars, etc) . Here's one that I love! I make it with blueberries a lot too.



~ Ingredients ~

• 6 oz container of Greek yogurt (or plain yogurt - Flavored yogurts = lots of sugar!) 
• 1 cup fresh or frozen berries. If using frozen, heat for 10-20 seconds in microwave before mixing. 
•  2 tsp honey
• 1/4 cup nuts. I use slivered almonds or chopped macademia nuts. 

Mix together and enjoy!

Pumpkin Protein Rolls with Peanut Butter, Honey & Banana Topping

Since I sometimes pull myself out of bed to get in a morning workout, I need two options for breakfast. One before I workout and one after. I'm kind of like a hobbit (second breakfast haha...get it?). Anyways, I saw this awesome recipe for pumpkin cinnamon rolls (http://www.fitnessrxwomen.com/life-health/jaime-baird/pumpkin-cinnamon-rolls/).

Not surprisingly I had most of the ingredients on hand, but I did change the recipe slightly. They were REALLY easy and they turned out really yummy and I can't wait to gobble a few after CrossFit tomorrow morning! Protein packed and filled with pumpkin, I love these! Enjoy!

Beef & Broccoli

Tonight I wanted to try to make something I never had before. I had two top sirloins just waiting for something...but they weren't the kind that I'd want to throw on the grill. A little thin for my taste. AND I went and got the rice vinegar I was missing for the Chicken Teriyaki Noodle Bowls so I figured I'd try to make the sauce again and use it for a marinade. Turned out pretty tasty although I might make a BIT more sauce for the rice in the end.
